Zucchini contains Vitamin C and lutein, both of which are known to be good for the eyes…This sauce is excellent with grilled shrimp, scallops, or poultry it can be Served warm or cold

·         Makes 1½ cups
·         1 cup steamed zucchini
·         2 cloves garlic
·         ¼ cup GF chicken broth
·         2 tablespoons minced shallot
·         2 tablespoons lime juice
·         ¼ cup olive oil
·         Salt and Tabasco sauce to taste

Put all ingredients in a blende. Making Interesting Sauces and Coulis

When you puree such vegetables as roasted red peppers and cooked summer squash and zucchini, you get a nice, creamy base for flavors. Add your favorite herbs and fresh lemon, lime, or orange juice. You can adjust the heat to your personal taste. You can also add cream, sour cream, or  mayonnaise for extra smoothness.
